Please read before ordering: stewing hens are leaner, bonier, and firmer than broiler chickens. They are not meant for roasting or grilling. When you cook them low and slow, though, they turn deep and rich, with plenty of collagen and real flavor. This is the bird generations of cooks relied on for chicken soup.

Best for:

Bone broth and stock

Chicken soup and chicken and dumplings

Stews, pot pie filling, and pulled meat for casseroles

Raised to our standards:

Non-GMO, corn- and soy-free feed

Unvaccinated and unmedicated

Free-ranged on unsprayed fields

How to cook: Simmer gently for 3–4 hours on the stovetop, or 8+ hours on low in a slow cooker.
